The triploid oyster: what it is, and what it is not

Same genes as a classic oyster, never milky in summer: the triploid, or four-season, oyster explained simply.

What is a triploid oyster?

A classic oyster carries its genes in two sets, as we do. A triploid oyster carries the same genes in three sets. Nothing is added, nothing is modified.

Is it a GMO?

No. European regulations do not regard this technique as genetic modification, and the French Ministry of Agriculture confirmed it in 2020. The shift to three sets sometimes happens by itself in nature. Bananas and seedless watermelons rest on the same principle.

How is it born?

In a hatchery, from a cross between two oysters: one carries four sets, the other two. Their offspring carry three. It then grows at sea, in the same beds and with the same care as any other.

Why is it called the four-season oyster?

Because it does not reproduce. In summer it never turns milky and keeps its energy for its flesh. It tastes the same in July as in December.

And Ostra Regal?

Ostra Regal is a triploid oyster, grown in Ireland for up to four years.
