Ostra Regal is the Boutrais family's premium selection: a cupped oyster farmed for four years on the beds of Ireland (Dundrum Bay, Bannow Bay), including a low-density pousse-en-conche phase, refined in claires, then purified and shipped from Cancale. Plump flesh, clean iodine, a sweet-briny balance that makes it a recognisable signature on the finest tables of Cancale.
