How to read grades
For cupped oysters, grades run from n°5 (smallest) to n°0 (largest): the lower the number, the heavier and plumper the oyster. Grade is a weight, not a quality — small or large, both can be exceptional.

About 30–65 g. Ideal for aperitifs and large gatherings: you eat more of them.
About 66–85 g. The reference tasting grade, most requested in restaurants.
About 86–110 g. A fine, plump mouthful for enthusiasts.
Over 111 g. Spectacular, often reserved for cooking or prestige tables.
Count 6–9 oysters as a starter, 12 as a main. Adjust by grade: the larger the grade, the fewer you serve.
