The "R months": myth or reality?
The popular rule says to eat oysters only in months containing an "r" (September to April). Originally it was about preservation before refrigeration and summer spawning. Today Ostra Regal can be enjoyed year-round: in summer some become milky (spawning), a creamier texture that has its fans.
The role of tides
On our Irish beds (Dundrum Bay, Bannow Bay), the oyster lives to the rhythm of strong tides. Alternating immersion and exposure strengthens the oyster, refines its shell and concentrates aromas — giving that firm flesh and clean iodine.
When is Ostra Regal at its best?
The cru is at its fullest from autumn to early spring, when the water is cold and the oyster firmest. Thanks to refining in claires and hand-selected grades, quality stays consistent all year.
