Ostra Regal

The dreamlike oyster

The oyster of the great tables.

Four years of farming in the cold waters of Ireland, a pousse en conche (pond growth), then selection in Cancale: pearly, crisp flesh and a hazelnut finish.

“An oyster is never hurried. It takes the time of the tides, of the seasons, of four years. Our craft is to give it that time.”

— La Famille Boutrais, Saint-Malo

From the selection of the spat to the chef's table, the family watches over every oyster. We do not seek volume, but the houses that will know how to serve it.

The ritual

The strength of the ocean, the softness on the palate

Three ways to receive it.

Ostra Regal oysters served plain

Natural

No lemon, barely a turn of pepper. Let the hazelnut speak.

Ostra Regal oysters with pomegranate, paired with champagne

Paired

Pomegranate, blanc de blancs champagne: iodine meets celebration.

To give

The illustrated crate

A wooden crate dressed in nautical charts, engravings and mythology, to evoke the oyster without ever drawing it. An object to give, and to keep.

The origin

Four stages, one signature

From the bays of Ireland to Cancale — four years of farming, then purification and shipping in Brittany.

  1. I · Vendée

    Spat

    Origin

It begins with rigorous genetic selection: the spat, cradle of the future Ostra Regal.

  2. II · Ireland

    Grow-out

    Growth

In the lively, cold waters of Ireland, the oyster grows, firms up and finds its character.

  3. III · Bannow Bay & Dundrum Bay

    Pond growth

    8 months minimum

The signature gesture, on our beds of Bannow Bay (Ireland) and Dundrum Bay (Northern Ireland): pousse-en-conche refines the flesh, sculpts the shell and gives its inimitable taste.

  4. IV · Cancale, France

    Purification & shipping

    ≤ 2 weeks

Back to Brittany: in Cancale, the house purifies, selects under a strict specification and ships — the finishing touch of an exceptional French house.
