The rule: dry, crisp, mineral
Against the iodine and salt of the oyster, look for a dry, crisp, mineral white. Acidity cleanses the palate; minerality echoes the marine terroir.
Safe bets
Muscadet-Sèvre-et-Maine sur lie (the Breton classic), Chablis (chalky minerality), Sancerre or Pouilly-Fumé (tension and citrus). On a plump Ostra Regal, a Chablis premier cru stands up to the iodine.
Champagne
A brut nature or extra-brut, without sugar dosage, pairs beautifully. Fine bubbles and tension make it a festive match.
To avoid
Oaky, sweet or tannic wines: they crush the oyster's finesse. Serve the wine well chilled (8–10 °C).
