Refining in claires: the secret craft

What refining brings to the oyster, and why it makes the difference on Ostra Regal.

What is a claire?

A claire is an old, shallow clay pond where the oyster spends its final weeks. The water is gentler and rich in phytoplankton, refining the flesh and rounding the aromas.

An Ostra Regal's journey

Growth on the Irish beds — Dundrum Bay (Northern Ireland) and Bannow Bay —, pousse-en-conche in Bannow Bay, refining in claires, then purification and shipping from Cancale: four years, one goal — consistency and finesse.

What it changes on the palate

Refining softens raw iodine and develops more complex, vegetal and nutty notes. The flesh gains roundness. It is the final touch of the oyster-farming craft.
